It's raining here today. And it rained all weekend too. I've been looking forward to sunny, dry autumn days but sadly they don't seem to be heading this way anytime soon. To cheer myself up and to welcome my boys home from work and school, I thought I'd make some muffins.
I found this recipe for Bakewell Muffins in a new library book, John Whaite Bakes. (You might remember he was the winner of the Great British Bake Off last year). These took ten minutes to prepare and then just 25 minutes in the oven - my kind of cooking. They don't look that impressive, but they are trully delicious. It's possible there may be none left for the boys as I can't stop eating them! x
225g plain flour
2tsp baking powder
150g caster sugar
150g glace cherries, roughly chopped
115g salted butter, melted
1 tsp almond extract
Preheat the oven to 180 degrees C.
Put the flour, baking powder, sugar and chopped cherries in a large mixing bowl and stir together.
In a jug, whisk together the milk, eggs, melted butter and almond extract, then slowly pour this into the bowl containing the dry ingredients. Fold together, but don't over mix. Divide the batter between twelve muffin cases.
Bake for 25 - 30 minutes until the muffins are well risen and golden brown. Allow to cool.
